Samples of fruits, roots, tubers, vegetables, fishs, game, and eggs acquired in markets in Manaus, Borba, Novo Airão and Tefé in Amazonas State, Brazil, were analyzed to determine their proximate composition. This table allows nutritionists to evaluate the macronu-trients in local foods, as well as to relate local diets to disease susceptibility. It also allows the local food industry to identify specific products best adapted to the local reality.
