Honey samples of the Melipona asilvai stingless bee collected in the Itaberaba and Tucano counties, semi-arid region of the State of Bahia, Brazil, were analyzed with the objective of contributing for the knowledge of the characteristics physical-chemical of that product. Most of the physical-chemical parameters showed values adequated for the human consumption, faciliting the exploration of that product by rural communities of the semi-arid area of Bahia. However, the high humidity values is an aspect that deserves a greater attention by the part of producers, who should have concern with hygiene cares when manipulating the honey during the collection and the storage processes.
