Methodology for evalution of good manufacturing practices in industries of cheese roll

This work aimed the adaptation of methodology for the evaluation of application of Good Manufacturing Practices (GMP) in industries of cheese roll. Nine questionnaires were used including pertinent questions to evaluation of structure, sanitary and processing conditions in the industry. For the evaluation of data, each item of the checklists was classified as advisable, necessary or indispensable and punctuated (1, 2 and 4 points, respectively). Questionnaires were applied in an industry of cheese roll located in Belo Horizonte, Minas Gerais, Brazil. In every checklists (block) weight was attributed (W), calculated in function to relative frequency of the indispensable items, allowing obtaining of pondered punctuation (PPE), used to classify the industry as excellent, very good, good, regulate or poor. To certify the efficiency of the methodology, the same industry it was evaluated by microbiological analyses of the raw materials, frozen doughs of cheese roll, environmental air, employees' hands, equipment, and utensils. Methodology was efficient to evaluate GMP and, pondered of blocks to allow a good evaluation of establishment, giving larger importance (larger weigh) to blocks directly related with the obtaining of quality and safely products.
