Food and consumption in the pandemic and beyond: a perspective from Madrid’s markets

Abstract

Despite experiencing significant transformations in recent decades, the municipal markets of Madrid continue to play a crucial role in the supply of fresh food. These markets are regarded as spaces where consumers can acquire high-quality products through proximity and trust. This article presents findings derived from participant observation and interviews with merchants conducted in the central district of Madrid throughout the final months of 2022. The study examines shifts in food consumption patterns during and following the COVID-19 pandemic, with a specific focus on the perception of risks, quality, and health associated with food. The obtained results offer valuable insights into trends and processes pertinent to contemporary food consumption.
