Physical and chemical characterization of yellow mombin fruits

Yellow mombin (Spondias mombin L.) fruits were physically and chemically characterized in order to select promising plants to use in agroindustry. Mature fruits from fourteen adult plants in Teresina, Piauí, were analyzed in the Núcleo de Estudos, Pesquisa e Processamento de Alimentos of the Universidade Federal do Piauí, in a completely randomized design with 20 replications. The average and range for all the characters were: fruit weight 9.9 g , 5.7 g to 16.5 g; fruit length 33.7 mm , 29.5 to 39.8 mm; fruit diameter 23.5 mm , 18.3 to 26.8 mm; pulp yield 72.6% , 69.7% to 77.5%; total soluble solids/total acidity ratio 10.5, 4.9 to 16.71. The variability presented for all the studied characters makes possible the selection of promising plants for implantation of commercial orchards, and distinguishing the genotypes ZLU1, ELD1, ZLI1, ZLI2 and ZLI3 , which fruits present desirable characters for industrial use.
