Open-access Nutritive values studies on wheat flour mistures with opaque—2 cornmeal, cassava meal or normal cornmeal

The nutritive value of wheat flour mixtures with opaque—2 cornmeal, cassava meal or normal cornmeal were studied through the protein efficiency ratio. The findings led us to believe that:

1. mixtures of wheat flour and cassava meal or opaque—2 cornmeal have better nutritive value than wheat flour;

2. mixture of wheat flour and normal cornmeal have less nutritive value than wheat flour.
